Banana and Walnut Muffins


1 cup oil
1 cup sugar
4 ripe bananas
2 tsp vanilla essence
3 large or 4 small eggs
¾ cup refined flour (maida)
½ tsp baking soda
¼ tsp baking powder
a pinch of salt
½ cup walnet kernels


Whisk together the refined oil and sugar in a food processor using the chopping blade, till smooth. Add the bananas and whisk again. Now add the eggs one by one while whisking continuously followed by the vanilla essence. Sieve together the refined flour, baking powder, baking soda and salt and add to the mixture. Whisk further to obtain a smooth batter. Pour the batter into muffin moulds and top each up with a walnut kernel. Bake in a pre heated oven at 180 º C for 15-20 minutes till a skewer pierced at the centre of muffin comes clean. Serve on its own or with a scoop of vanilla ice cream.
