Plum Cake

Christmas Special Plum Cake

5 eggs (yolk & white separated)

225 gms butter

250 gms refined flour (Maida)

250 gms sugar

2 tsp baking powder

2 tsp vanilla essence

3 tbsps dark rum

1 cup dry fruits soaked in dark rum

5 each- green cardamom, cinnamon and cloves


Beat sugar and butter. Sieve the refined flour with baking powder and dry ground spices. Add egg yolk to sugar and butter. Add the essence, rum, dry fruits and caramelised sugar. Add the flour and stiffly beaten egg whites. Bake at 180o C for 40 minutes or till a skewer poked into the middle of the cake comes out clean.

Special Tip

If caramelised sugar tends to harden while it gets cold, then add ½ cup of water to it and heat- let it cool and add to the mixture.

Suggested Pairing: A  Dessert wine (Port,Sauternes, Monbazillac or other), Champagne (Sec or Demi Sec), Muscat Liqueur.
