Spaghetti Bolognese

For the Sauce:

500 gm Mutton Mince (Chicken if you prefer)
650 gms  chopped  onions
800 gms chopped tomatoes
200 gms tomato puree
8 tbsps olive oil
1 tsp salt (or to taste)
1 tsp pepper
2 tbsps oregano
2 cloves garlic
1 tbsp honey
1 tsp paprika (red chillies)
1 glass red wine
1 splash Worcestershire sauce
1 tsp Sambal oelek ( Hot Chilli Paste)

For the Spaghetti

1 Kg Spaghetti
7 litres water
2 tbsp Olive Oil
1 tsp salt
2 tbsp butter
Freshly chopped Basil
Freshly grated cheese

Preparation: Sauce
Chop the onions- not too finely. Press the garlic. Pour olive oil into a large sauce pan, add the onions and fry them in the oil until they change colour. Now crumble the mince into the onions and fry it until it is completely done. Continue frying the mince and the onions while stirring to let some of the water that has accumulated, evaporate. When the mince is nice and crumbly, pour in the red wine. Now add the tomatoes, the tomato concentrate, the honey and the spices. Let the whole lot simmer for an hour with no lid on the sauce pan.

Preparation: Spaghetti

Prepare spaghetti as per instructions for around 15 minutes. When done, put it in a colander and pour cold water. Toss it in melted butter in a sauce pan. Garnish with freshly chopped basil and some cheese.

Pour the sauce over the spaghetti and serve.

Suggested Wine Pairing: Syrah, Cabernet Syrah, Barolo, Chianti or any other powerful Red.
